Serve 4
Ingredients
1 cup kidney beans (tin, drianed)
1 small tin or freshly cooked sweetcorn
3-4 pickled chilli peppers
1/2 small onion or shallot, thinly sliced
1/2 pomegranate
1 cup tomato, cut to bite sizes (any type)
half cucumber, cut to bite sizes
Dressing
juice of 1/2 -1 lime
salt and pepper to taste
fresh mint/basil for garnish
Method
- Mix all the ingredients in a large bowl. Keep in fridge before serve.
