I love grow my own fruit and vegetables! And I am lucky enough to have a good size garden to allow me to grow my own. I used most the ingredients from my garden. This recipe is simple, quick, healthy, and extremely adaptable to whatever veggies and fruits you have on hand!
A refreshing apple and green bean salad. It has the perfect balance of sweet, sour, salty and spicy. I use apple for this recipe, but you can use pear, mango, peach or other crunchy fruit.
Serve 2
Ingredients
1 apple, cut them to green bean sizes
half bag of green beans
1/2 cup of cherry tomato, slice to half
1 tbsp of toasted desiccated coconut or toasted peanut
Dressing
juice of 1/2 lime
1 - 2 tbsp fish sauce
1/2 tsp white vinegar (or you can just use lime juice)
1 tsp brown sugar
1 garlic clove, finely chopped
1 red chilli, finely chopped (optional)
Method
- Mix all the dressing ingredients in a jam jar and give it a good shake. Taste and adjust the seasoning. Keep in fridge before serve.
- Wash the green beans, then put them in a large mortar and pesto, lightly pound them. Put them in a large mixing bowl along with some tomato and desiccated coconut.
- Pour the dressing into the salad and toss well.
